The Jar We’re Never Without

There are some things that always seem to be in our fridge, and Tracklements Fresh Chilli Jam is one of them.

It’s sweet, tangy and properly chilli-ish, with enough heat to wake things up without completely obliterating whatever you’re eating it with. Made with fresh chillies, sugar and vinegar, it starts with sweetness before the warmth builds, followed by a lovely tangy finish.

And despite the word jam, this isn’t something I’m spreading on my toast in the morning.

It’s far more likely to be sitting next to the cheese.

What Cheese Goes with Chilli Jam?

Chilli jam works particularly well when you’ve got a cheese with enough flavour or creaminess to stand alongside that sweet heat.

• Soft cheese – Baron Bigod is lovely with chilli jam. The rich, creamy cheese softens the heat while the chilli brings something completely different to the pairing.
• Manchego PDO – Manchego PDO gives you firm, savoury sheep’s milk cheese against sweet chilli. Add some bread and you’ve got a very easy little snack.
• Goat’s cheese – Both fresh and harder goat’s cheeses can work brilliantly. That distinctive fresh acidity is particularly good against the sweetness and heat of the jam.
• Blue cheese – Try it with Roquefort PDO. Salty, creamy blue cheese with sweet chilli heat is a big combination, but a very good one.

And once you’ve got a jar open, you’ll find plenty of other excuses to use it. Burgers, sandwiches, grilled vegetables, chicken, pork, stir-fries… basically anything that looks as though it needs cheering up.

Jen’s note: There really is always a jar of this in our house. It’s one of those things I reach for when dinner needs a bit of help — and quite often when cheese doesn’t need any help at all, but I fancy adding chilli jam anyway.
