Our Christmas orders are now closed. You can still buy our Cheese Subscriptions to start in January, as well as book our courses and tasting events. If you want to purchase vouchers you can do so until the 20th December but please note that it can take up to 48 hours for the vouchers to be emailed to you as we process these manually.

Give Your Cheeseboard A Spicy Kick!

You will always find a jar of Tracklements Fresh Chilli Jam in our house. It’s got a lovely brightness to it and always seems to bring a bit of cheer to the table. If dinner’s looking a bit uninspired, I just reach for a jar, and suddenly things are looking up. It’s not really a toast sort of jam; you’re much more likely to find it keeping company with cheese! The mix of fresh chillies, sugar, and a splash of vinegar gives it a good kick, but it never takes over the whole plate.

 

Flavour Profile

Its deep ruby red colour and thick texture instantly elevate even plain crackers. Visible bits of chilli and seeds give a homemade look and a fresh, lively, flavourful taste.

As soon as you open the jar, you get a whiff of fresh chillies with a hint of vinegar in the background. If (like me) you like a bit of spice, then you’ll love this jam.

On the tongue, there’s a gentle sweetness that gives balance, then lively chilli heat follows; never overwhelming, but gradually building, with a tangy vinegar finish that keeps things fresh. This harmonious blend of sweet and spicy notes makes this jam a kitchen essential.

 

Cheese Pairing Ideas

Its texture is thick, smooth, and easy to spread, with just enough chilli chunks and seeds for interest. It pairs well with all sorts of cheese, but here are four combinations I especially recommend:

  1. Baron Bigod‘s creamy, buttery texture and gentle flavour pair perfectly. The cheese softens the heat, so you get chilli flavour without it being too much. Sweet notes from the jam complement the Baron’s slight tang. Crackers or crusty bread complete this simple, tasty snack
  2. Manchego’s firm, nutty, tangy bite is a great match for the jam’s sweet heat. The savoury cheese and spicy-sweet spread balance each other, while the firm cheese holds the jam in place; ideal for tapas or a cheeseboard
  3. The intense, tangy bite of a really good, hard goat’s cheese stands up nicely to the chilli jam’s heat, while the jam’s sweetness balances the cheese. This pairing is punchy and exciting. Try it with fresh bread or a warm baguette
  4. For an indulgent match, blue cheeses (especially Roquefort) balance the jam’s sweet, spicy notes with their rich, salty tang. The heat enhances blue cheese flavours, and the creamy cheese with chunky jam mix is brilliant for any cheeseboard.

 

Jen’s Note: It’s not just for cheese; this jam makes a great glaze for chicken or pork, or adds a sweet-spicy kick to burgers, sandwiches, grilled veg, or a quick stir-fry.
