Ingredients
- Some stale bread, (or fresh) enough to slice and make two layers in a 2 pint dish.
- 50g butter
- A finely chopped clove of garlic
- Finely chopped herbs, parsley or whatever you have in the garden or bottom of the fridge
- 100g or more of any old cheese you have lying around…grated
- 400 ml milk
- 2 eggs
- 1 tsp mustard any kind (grain is good)
- Bit of olive oil
- 2 or three onions (red if possible)
- 50ml balsamic vinegar
- 30g sugar
- Black pepper
- Chilli powder (if you like it spicy)
Method
- Preheat the oven to 180c
- First cook the onions with a splash of olive oil in a frying pan for five minutes (careful not to let them burn)
- Add the vinegar and sugar and cook until a sticky like marmalade is formed
- Slice the loaf into smallish squares or triangles
- Add the garlic to the butter and add some of the chopped herbs
- Spread this on the bread
- Arrange a layer of bread in the bottom of the dish, spread over half the onions and sprinkle half the grated cheese
- Repeat making sure there is cheese all over the top, if necessary, add some more cheese
- Beat the milk, eggs and mustard together with some black pepper
- Pour over the bread and leave to soak for 10 minutes
- Sprinkle some chilli powder over if you like it spicy
- Bake for 25-30 mins until nicely golden
- Serve with some wilted chard or a salad
- For an extra twist, add some pickled walnuts
