Black Bomber is a mature cheddar cheese made in Wales. It is a full flavoured, rich and creamy cheddar cheese with a firm texture and a good bite.
Black Bomber is an extra mature Cheddar from the Snowdonia Cheese Company in North Wales, instantly recognisable by its distinctive black wax and wonderfully rich, creamy texture.
This isn’t a Cheddar that makes you choose between maturity and creaminess. Black Bomber manages to deliver both. Made with pasteurised cow’s milk and vegetarian rennet, it has a full, rounded flavour but retains a smooth, almost buttery texture that makes it incredibly easy to eat.
The black wax isn’t just part of Black Bomber’s distinctive look. It helps protect the cheese and retain moisture, contributing to that characteristically smooth texture beneath.
Snowdonia Cheese Company was founded in North Wales in 2001, with the aim of creating distinctive cheeses using quality ingredients and plenty of character.
Black Bomber has gone on to become the company’s best-known cheese and, with its striking black wax, is probably one of the most recognisable British Cheddars around. Its popularity comes from a combination that isn’t always easy to achieve in a mature Cheddar: plenty of flavour without losing that lovely creamy texture.
It’s bold enough for people who love a good mature Cheddar, but approachable enough that it tends to disappear remarkably quickly from a cheeseboard.
Cut through that glossy black wax and inside you’ll find a pale, creamy Cheddar with a beautifully smooth texture.
Black Bomber is rich, buttery and savoury, with the depth you’d expect from an extra mature Cheddar but without becoming overly dry or crumbly. There’s a lovely tanginess running through it, alongside nutty, slightly caramelised notes and a long, rounded finish.
What I particularly like about Black Bomber is the texture. It has plenty of maturity and character, but remains creamy and almost melt-in-the-mouth.
It’s easy to see why it has become such a popular Cheddar. It’s familiar enough to please traditional Cheddar lovers, but has more than enough personality to earn its place on a really good cheeseboard.
Jen’s note: I’ve always thought Black Bomber is a bit of a crowd-pleaser. It has all the flavour you want from a mature Cheddar, but it’s still beautifully creamy. Put it on a cheeseboard and there’s very rarely any left at the end.
