Our Christmas orders are now closed. You can still buy our Cheese Subscriptions to start in January, as well as book our courses and tasting events. If you want to purchase vouchers you can do so until the 20th December but please note that it can take up to 48 hours for the vouchers to be emailed to you as we process these manually.

Tracklements Quince Fruit Cheese

Add a bit of Spanish flair to your cheeseboard!

Tracklements Quince Fruit Cheese instantly elevates any cheeseboard, even if cheese is your main focus. Quince is a rarity; you won’t find it in most supermarkets, but it’s been a preserve-maker’s staple for centuries. Tracklements have given Spanish membrillo a British spin, creating a balanced mix of gentle sweetness and tang that pairs perfectly with your favourite cheese.

 

Flavour Profile

Quince stands out among fruits. Bite it raw, and it’s inedible, but slow-cooked with sugar, it becomes aromatic, rich, and flavourful. Tracklements turns quince into a smooth, sliceable preserve, between a jelly and a paste, with a gorgeous amber or rosy gold colour, promising a tasty treat.

For me, the aroma of Quince Fruit Cheese delivers baked apple, honey, a hint of citrus, and (of course) the quince’s signature floral note. It’s inviting, refined, and signals good flavour to come.

The sweetness is restrained. It begins like apple, deepens to marmalade, and offers just enough tang. Acidity balances rich cheeses. A hint of spice and quince’s signature graininess keep things interesting. The finish is clean and floral, inviting another bite.

 

Cheese Pairing Ideas

Here are a few of my favourite pairings:

  1. Manchego PDO: This is the classic Spanish combo. Manchego’s firm, slightly crumbly texture and nutty, savoury flavour go perfectly with the gentle sweetness and tang of quince. It’s a simple pairing, but it always hits the spot.
  2. I always find that soft cheeses like Brie or Camembert benefit from quince. The preserve cuts through their richness, keeping all of the flavours balanced.
  3. Fresh goat cheese is a natural match for quince. The sweetness balances the tang, and their floral notes shine together. If you’re feeling particularly daring, roasted walnuts or honey add an extra touch of flair.
  4. Alpine cheeses like Comté PDO or Le Gruyère AOP also benefit from quince. The preserve highlights their nutty, sweet notes and adds brightness, ideal for fancy cheeseboards or with white wine.

 

Jen’s Note: Don’t stop at cheese! This quince paste also works as a roast glaze, melted over baked cheese, in sandwiches, or on charcuterie boards. It elevates savoury foods.
