About Wigmore Mini

Wigmore Mini is the little sibling of our full-sized Wigmore cheese, made by Village Maid Cheese just down the road from us here in Berkshire.

Each cheese weighs around 180g, which makes it a rather lovely size for two people to share — although I’m not going to judge you if you decide otherwise.

Made with rich sheep’s milk and covered in a soft white bloomy rind, the Mini has all the buttery, nutty character of Wigmore in its own perfectly formed little wheel.

And there is something particularly satisfying about having an entire cheese to yourself.

Small but Perfectly Formed

The lovely thing about Wigmore Mini is the way it ripens.

Like its larger sibling, it ripens from the outside towards the centre. When it’s young, you’ll find a firmer, slightly chalky middle surrounded by a softer layer beneath the rind.

Leave it to mature and that creamy layer gradually works its way inwards until the whole cheese becomes beautifully soft and yielding.

Because the Mini has more rind in proportion to its creamy centre, you also get plenty of the earthy, mushroomy flavours that develop on the outside.

Pierre would probably describe it as très élégant.

Then he’d discover it was made in Berkshire and immediately take it back.

 

Wigmore – Jen’s Tasting Notes

Wigmore Mini might be little, but there’s plenty going on.

The sheep’s milk gives it a wonderful richness and gentle sweetness, with buttery flavours followed by toasted nuts and a delicate savoury tang.

As it ripens, the texture becomes softer and creamier and those mushroomy notes from the rind become more noticeable.

I particularly love cutting one open when it’s properly ripe. The white rind gives way to that beautifully soft, pale centre and you know you’re in for a treat.

It’s rich, creamy and incredibly moreish.

And at 180g, there really isn’t much danger of leftovers.

 

How to Serve and Pair Wigmore
  • Make sure you take it out of the fridge a good hour before you want to eat it. Small cheeses warm up relatively quickly, but you’ll still get so much more flavour once it’s lost that fridge chill.
  • Classic pairings: English sparkling wine is fabulous with Wigmore Mini. The bubbles and acidity cut through the richness of the sheep’s milk beautifully.
  • Something a little different: Try it with a light Gamay. The juicy red fruit works with the sweetness of the cheese without overwhelming it.
  • On the plate: Serve it whole with good bread, ripe pear and perhaps a little quince paste. There’s something wonderfully indulgent about putting a complete little cheese in the middle of the table.
  • In the kitchen: This is where the Mini really wins. Wrap the whole cheese in puff pastry with a few cranberries or apricots and bake until golden. Cut through the pastry and you’ll find molten Wigmore waiting inside. What’s not to love?

 

Jen’s note: I love mini cheeses. Put a wedge of cheese on a cheeseboard and it’s lovely. Put an entire cheese on there and suddenly it feels like an occasion. At 180g, Wigmore Mini lets you have the whole-cheese experience without needing to invite half the village round to help you finish it.
