A delicious smoked red cheese from Dorset. Made from rich, creamy milk sourced from cows which graze on the lush pastures near the dairy.
Dorset Red is a wonderfully tangy, smoked cheese made on the Jurassic Coast. It is created in the same way that Ford Farm makes their traditional cheddar, using milk sourced from local grazing herds and with the process conducted predominantly by hand. There are two crucial differences top their cheddar make – they lower the heat of the milk and stir the cheese curds less often, resulting in a milder flavour as well as a softer texture. The cheese is then is pressed into block moulds and left to mature for around three months.
Dorset Red has a deep amber colour, due to the addition of annatto, a commonly used natural colouring which gives it a similar appearance to a Red Leicester. The cheeses are then cold-smoked over oak chips, overnight, which bestows it with its distinctive, mellow, smoky flavour.
