About Rollright

Rollright Cheese is a real gem from the Cotswolds, made with pasteurised cow’s milk at King Stone Dairy in Gloucestershire. It takes its cue from those famous alpine washed-rind cheeses you find in Switzerland and France. Think Vacherin Mont d’Or; soft, rich, and just a bit decadent.

It’s not your typical British cheese like Cheddar or Stilton; Rollright is much softer and oozier, a bit like French Reblochon. In fact, people often call it the English answer to that style.

Rollright is a bit of a newcomer compared to those ancient European cheeses. It was dreamed up in the mid-2010s by David Jowett, who swapped kitchens for cheesemaking and learned his craft at places like Neal’s Yard Dairy, Jasper Hill Farm in Vermont, and Gorsehill Abbey Farm in Worcestershire before setting out on his own.
From Neolithic Beginnings…

The name comes from the Neolithic Rollright stones which stand close to the original site of the dairy, just outside Chipping Norton in Oxfordshire. There’s something lovely about a cheese that’s tied to local legend and landscape. Though production later shifted to Gloucestershire for proximity to the dairy herd, the connection to the stones and the Cotswold countryside is still a defining part of Rollright’s identity and charm.

 

Rollright – Jen’s Tasting Notes

What I love most about Rollright is its texture. It’s just so soft and creamy; almost spoonable when it’s ripe, with a glossy inside that just melts away. The rind is brushed as it matures, giving it a gentle peachy-pink colour and a thin, delicate surface that holds in all that richness.

It smells gentle and earthy, with a bit of wood and yeast, and just a hint of that washed-rind funk, but nothing too strong. Its flavours are nuanced and layered with notes of crème fraîche and a subtle grassiness reflecting the milk’s pasture origin. Often you can pick up savoury undertones reminiscent of cured ham and mustard seed, alongside a gentle nuttiness or peanut-like richness in some wheels.

 

How to Serve and Pair Rollright
  • Make sure you take it out of the fridge a good hour before you want to eat it so it can come up to room temperature.
  • Classic pairings: A dry sparkling wine or Champagne is a great match as the bubbles cut through the creaminess and bring out the cheese’s buttery side
  • Something a little different: Saison beers or farmhouse ales also pair nicely as their refreshing yeasty notes complement the washed-rind and milky flavours.
  • On the plate: Crusty bread and pickles are always a winner; the tang and crunch are just right with the oozy cheese.
  • In the kitchen: For something a bit special, warm up Rollright gently with garlic and herbs for a fondue-style treat.

 

Jen’s note: As it matures, the bark slowly infuses the cheese with those woodland notes, giving Rollright a unique aroma that really connects it to the British countryside.
