St Julien (Rambol) Cheese

About St Julien

Walnut cheeses are a relatively new creation. A cheese known as Rambolitain (a savoury mixture of cheese and nuts) was invented in the 1960s in a small creamery in Rambouillet. This is a town on the outskirts of Paris within the Île-de-France area which is famous as the home of Brie de Meaux. Given its success, Rambolitain required new, larger production premises and so in 1969 the creamery transferred activity to the nearby town of Saint-Arnoult-en-Yvelines. This is still within Île-de-France, so the move didn’t affect the workforce at all. A few months later, a new creamery was built, and production still carries on there today. The Rambol company was incorporated in 1970. Rambol with Nuts was its first decorated cheese and it was launched commercially in the same year.

Tradition meets Modernity

St Julien (Rambol) is a good example of how modern eating can still feel traditional. It takes those classic French ingredients, fresh cheese and walnuts, and puts them together in a way that fits busy lives. No need for any prep or waiting around; the cheese is ready to enjoy as soon as you open it, but it still feels thoughtful and well-made.

St Julien / Rambol – Jen’s Tasting Notes

This walnut cheese is made from fresh cow’s milk, so it’s not aged at all. That gives it a lovely clean, milky taste and a soft, spreadable texture, just right for slathering on a good bit of bread! It’s pale and creamy, sometimes almost whipped, with little walnut pieces scattered through. The nuts are chopped small, so you get a nice crunch without it taking over.

How to Serve and Pair Rambol
  • Make sure you take it out of the fridge a good hour before you want to eat it so it can come up to room temperature.
  • Classic pairings: For me this is a summer cheese, so I love to pair it with a crisp Rosé
  • Something a little different: A dry cider also makes a lovely combo.
  • On the plate: I like it best spread thick on a slice of crusty bread, wholegrain or sourdough are especially good, as they pick up the nutty flavours. It’s also lovely with crackers, dried figs or apricots, or even a few slices of fresh pear or apple. All those extras bring out the cheese’s creamy, earthy side and add a bit of sweetness or tang for balance.
  • In the kitchen: You don’t have to serve St Julien cold. It melts beautifully, so you can stir it into sauces, mashed veg, or pasta for a bit of extra richness. When it’s gently warmed, the walnuts become even more aromatic. I’ve found it works really well in stuffed chicken, savoury tarts, or baked veggies, rich, but not too much. Just add it near the end so you keep that lovely flavour and texture.

Jen’s note: This cheese is super lovely, unless you’re allergic to nuts…
