Stärnächäs Extra Mature is a Swiss cheese like no other. Superbly smooth and creamy with an intense complexity that gets your brain’s endorphins singing!
Stärnächäs translates as ‘star cheese’, and the Stärnächäs Extra Mature has certainly become a star in our world of artisan cheese. Think of a cross between famous Swiss cheeses such as Le Gruyère AOP and Appenzeller.
Stärnächäs Extra Mature is made at the foothills of the Säntis mountain. This mountain is the highest peak north east Switzerland. The cheese itself was created by Affineur Walo von Mühlenen in 2010. Walo was looking for a unique Swiss cheese and collaborated with Kaserei Gabriel, a local cheesemaker, to create something a bit different to Le Gruyère AOP. The resulting cheese was a true star and hence Stärnächäs was born.
Affineur Walo takes great pride in the cheeses that he matures. Stärnächäs Extra Mature is aged between 8 – 10 months and each wheel is turned and brushed with care and commitment. This cheese is seriously good!
Jen’s note: This is definitely a cheese to take out of the fridge at least an hour before you want to eat it – no nibbling it before it warms up as the flavours won’t have had time to really shine through.
