A previous winner at the International Cheese Awards, Stärnächäs Extra Mature is a Swiss cheese like no other. Rich, nutty & incredibly easy to nibble at!
Stärnächäs translates as ‘star cheese’, and the Stärnächäs Extra Mature has certainly become a star in our world of artisan cheese. Think of a cross between famous Swiss cheeses such as Le Gruyère AOP and Appenzeller. It has spicy undertones with an aroma of honey.
Stärnächäs Extra Mature is made at the bottom of the Säntis mountain. This mountain is the highest peak north east Switzerland. The cheese itself was created by Affineur Walo von Mühlenen in 2010. Walo was looking for a unique Swiss cheese and collaborated with Kaserei Gabriel, a local cheesemaker, to create something a bit different to Le Gruyère AOP. The resulting cheese was a true star and hence Stärnächäs was born.
It has become one of our favourite cheeses. We love to pair it with our Petit Chablis.
