Golden Saye is 4 months old with a savoury tang. It has a natural rind, and a sweet, almost caramel flavour. One to relish with a glass of Rosé!

Description

Golden Saye is Spenwood‘s Guernsey milk cousin. It is a hard, Guernsey cow’s milk cheese made to the same recipe as Spenwood. It is matured for 4 months with a natural rind. The cheese is mildly savoury, toothsome and moreish with a subtle umami tang. It has a lovely gentle caramel sweetness to the finish. The rind closely resembles that of Spenwood, a greyish white rind that beautifully contrasts the golden paste underneath it.

The name encapsulates the striking golden appearance of the cheese and incorporates the origins of Village Maid. “Saye” relating to “Stratfield Saye” where the Duke of Wellington’s Guernsey herd grazed in the late 1980’s. It was here that Anne Wigmore first explored Guernsey milk cheesemaking, paving the way for our range of Guernsey milk cheeses that have come since.

Village Maid Cheese was started in 1986 by Anne Wigmore. Anne had previously worked for the National Institute for Research in Dairying as a microbiologist, but she left in order to pursue her dream of producing her own cheeses.

Today Anne works alongside her husband, Andy, and their son and daughter in law, Jake and Kayleigh. The Wigmore family have recently completed a new dairy and maturation rooms at their village location. Their cheese production is second to none in the UK. They encapsulate the true ethos of artisan cheesemaking.

We visit the Village Maid dairy every 2 weeks to buy our cheese direct from them. This means that we have the opportunity to chat to the cheesemakers and find out what their plans are for the future. We also feature 6 other cheeses from Village Maid. They are Waterloo, Spenwood, Heckfield, Barkham Blue, Wigmore and Maida Vale.

Golden Saye pairs really well with a chilled Rosé.
