Our Selles-sur-Cher PDO cheese is soft, tangy and nutty with a melt-in-the-mouth quality that keeps you coming back for more
Selles-sur-Cher PDO stands out for its puck-like shape and natural rind. Its rind is grey, ashen and completely edible. It has a fresh, yielding and slightly pasty texture. Delicately earthy and smooth when it is young, it becomes firm, tight and sleek as it ripens. It has a slightly acidic and sweet taste when young, then it gets saltier and more hazelnutty as it matures.
A PDO protected cheese since 1975, it is made in the Centre-Val de Loire region of France. Like so many cheeses its name is derived from the town where it was first made. There are records of this amazing little cheese being made in the area back in the 19th century.
Geeky cheese fact: It takes about 1.3 litres of goats’ milk to make a single 150g Selles-sur-Cher PDO cheese!
For us, the ultimate pairing for this cheese is a chilled glass of our Chapel Down Bacchus.
