Fourme d’Ambert PDO is one of France’s oldest cheeses. Historians believe that it was first made in Roman times! It is a semi-soft cheese and it comes into us as a 2kg cylinder so we slice it into rings. A dense and creamy cheese, it is known as the connoisseurs’ blue cheese due to its mellow, easy going flavour. Our Fourme d’Ambert is made from pasteurised milk and it is one of the most delicate blue cheeses. Its flavours are remarkably balanced, the buttery smoothness of cow’s milk contrasting with the sharper and nuttier blue.
‘Fourme’ is an old French word for cheese which derives from the Latin ‘forma’. This describes its cylindrical shape, while Ambert is the mountainous town in Auvergne where it comes from.
This cheese is protected by its PDO status. PDO is a protected designation of origin and the rules for Fourme d’Ambert state that the cows producing the milk used in its production must graze on local pasture and grass should be their main source of food.
We love to pair it with a fruity red wine or a sweet dessert wine such as a Sauternes.
