Cheese should be stored in a cool place and so it is best to keep all of your cheese in the vegetable compartment of your fridge, usually at around 4.5°C. It can be stored in its original wrapper. Don’t forget that cheese is a natural product so you can expect some blooms and moulds to develop on the outside over time.
When you are ready to serve it only take out of the fridge the amount you think you will need. Allow the cheese to come to room temperature by getting it out of the fridge for about an hour before eating. This allows it to develop a fuller, more aromatic flavour. We find that the rind is the tastiest part of a cheese but it should always be a case of personal preference, if you enjoy it – eat it, if you don’t, then don’t!
