About Crozier Blue

If you haven’t had Crozier Blue before, you’re in for a bit of a treat. This is a sheep’s milk blue that’s really quite different, especially if you’re more used to the cow’s milk versions. It’s got that salty punch you associate with Roquefort PDO, which is exactly what makes it so moreish. You get a lovely, rich flavour that’s beautifully balanced, and a texture that just melts away. It’s no surprise it keeps popping up on cheeseboards and picking up awards.

Crozier Blue comes from Cashel Farmhouse Cheesemakers, a family dairy in County Tipperary. The Grubb family, Louis and Jane, first made their name with Cashel Blue, one of Ireland’s first farmhouse blues made with cow’s milk. Crozier Blue came along a bit later, when they decided to have a go at making a blue with sheep’s milk instead. I, for one, am very glad they did.

Crozier Blue is a young cheese; it first appeared in the early 1990s. The milk comes from Friesland sheep that graze on the limestone-rich fields around Cashel, which is what gives the cheese its lovely, distinctive flavour.

The name ‘Crozier’ is a nod to both the shepherd’s staff and St. Patrick’s crozier at the Rock of Cashel, right there in Tipperary. I think it’s a lovely way to bring in a bit of local history and the cheese’s farming roots.

It’s also the only blue cheese in Ireland made from sheep’s milk, which makes it a bit of a rarity in the world of Irish cheese.

Crozier Blue has picked up plenty of awards over the years; World Cheese Awards, British Cheese Awards, International Cheese Awards, Great Taste, you name it. I’d say it’s right up there with the best sheep’s milk blues outside of France.

 

Crozier Blue – Jen’s Tasting Notes

So, what does it actually taste like? For me, Crozier Blue is rich and full-flavoured, with a pleasant saltiness balanced against the sweetness of sheep’s milk. It is creamy and well-rounded, making it more approachable than many traditional blues. I often pick up notes of mild spice, toast, and a natural sweetness can become more pronounced with age. 

Unlike some blue cheeses that come at you with a big kick, Crozier Blue builds its flavour gently. It’s the sort of cheese that rewards you for slowing down and enjoying all that creamy, balanced goodness.

 

How to Serve and Pair Crozier Blue
  • Make sure you take it out of the fridge a good hour before you want to eat it so it can come up to room temperature.
  • Classic pairings: I love a zesty, high-acid Riesling, as its bright fruitiness contrasts beautifully with the cheese’s richness.
  • Something a little different: Make it an all Irish affair with a dram of Irish Whiskey. Go for a smooth, mellow whiskey to complement the salty sweetness.
  • On the plate: I’d go for a 3-pronged approach:
    • Fruit: Pears, figs, apples, and grapes lend sweetness and freshness.
    • Nuts & Honey: Toasted walnuts or hazelnuts, drizzled with honey, make excellent companions.
    • Charcuterie: Salami and prosciutto provide a satisfying contrast on a cheeseboard
  • In the kitchen: Don’t be shy about crumbling it over salads or roast veg for a bit of extra flavour.

 

Jen’s note: Crozier Blue is the sort of cheese that can catch you off guard. If you’re expecting a big, bold blue, you’ll find something much more gentle and inviting here. It’s velvety, full of balanced flavour, and has a real Irish character. Well worth a try, especially if you fancy something a bit different on your cheeseboard.
