Pecorino Dolce is a fresh, light cheese made from sheep’s milk. It never goes runny like a Brie but instead it maintains its structure in spite of being intensely creamy.
Our Pecorino Dolce is matured for just 3-5 weeks making it our youngest Pecorino. It has a delicately fresh and gentle flavour with a perfect lamby finish.
In English Pecorino means ‘of sheep’ whereas Dolce means ‘sweet’ and is the perfect way to describe this delicious young cheese from Tuscany.
Pecorino cheese is one of the oldest cheeses we know. Several ancient Roman scholars including Plinny the Elder and Virgil made references to cheese production techniques which were very similar to how we make Pecorino today. They say that an army marches on its stomach and the Roman legionnaires famously took Pecorino cheese with them on their travels as it had a high nutritional value and a long shelf life.
The very best way to enjoy Pecorino Dolce is to drizzle it with our Moscato grape nectar, crack open a baked figball and pour a glass of chilled Pouilly Fumé.
