Brightwell Ash is a small yet perfectly formed goats’ cheese. It slowly begins to break down under its ash covered rind as it matures and the soft cheese that comes through is fabulously more-ish!
Originally made in Shillingford, South Oxfordshire, Brightwell Ash is a disc shaped goats’ cheese with an ash based natural rind. It has a silky texture and particularly sumptuous flavour with hazelnut and citrus notes. Released at three weeks old it has great taste for a young, fresh cheese.
The name Brightwell Ash comes from a village near to where the cheese was first made. We also sell Sinodun Hill from the same dairy.
At the start of 2025, Fraser and Rachel moved their home, family, dairy and 241 goats to their very own farm in Carmarthenshire, Wales. There was a brief interlude in production as all settled down to life in Wales but the cheeses are back and better than ever.
The pair began cheesemaking in 2014 having been inspired by an article they read about cheese whilst on holiday. It was a complete career change for them both, but it has proved to be a successful one. Their herd of goats are predominantly Anglo Nubian (the cute goats with the floppy ears). These goats give a particularly creamy milk which is wonderful for cheesemaking.
Once the goats are milked, their milk goes straight into the cheesemaking vat, this means that the cheesemaking process begins whilst the milk is still warm. The result is a beautifully creamy cheese with a perfect balance of flavours.
Try this cheese with a chilled glass of Pouilly Fumé or (do as Jen does) and just eat it on its own letting the flavours fill your mouth.
