The smaller version of the Godminster Heart weighs approximately 200g, whereas the larger is 400g. Encased in a distinctive burgundy wax, this organic cheddar is beautifully smooth and has a buttery taste.
Godminster’s story starts back in the early 1980s, when the farm in Somerset made the decision to go organic. Surrounded by lush green fields and contented cows, it’s easy to see why they wanted to do things properly. Since then, Godminster has become a real favourite, not just because of their organic ethos, but because they make a cheddar that’s bursting with flavour and does its bit for the planet too.
It all began with a genuine passion for making proper cheddar. The farm went organic, using only milk from their own cows, who spend their days happily grazing in the fields. As more people started looking for food that tasted good and did good, Godminster really rose to the challenge. The result is an award-winning cheddar that’s now enjoyed by cheese lovers all over the place.
Godminster still makes its cheddar the traditional way, with a real focus on quality and sustainability. Each wheel is handmade, so no two are ever quite the same. These days, you can find Godminster cheddar all over the world, a little slice of Somerset, wherever you happen to be.
Everything begins with organic milk from Godminster’s own cows, who spend their days wandering the fields and munching on grass, clover, and herbs. You can honestly taste the difference, the milk is packed with flavour, and it gives the cheddar that wonderful earthy richness.
Godminster keeps to the old ways when making their cheddar, with plenty of care and attention at every stage. The milk is pasteurised and they use vegetable rennet, so it’s suitable for vegetarians. Once the curds are ready, they’re pressed into moulds and left to mature until they’re just right.
You can always spot Godminster cheddar by its bright burgundy wax coating. It looks fantastic and keeps the cheese in perfect condition as it matures. The longer it ages, the firmer the texture and the more intense the flavour becomes.
Everything is made in small batches, so there’s a real attention to detail. Each wheel is crafted by hand, and that organic milk truly makes it stand out from the crowd.
Godminster cheddar is well known for its rich, creamy texture and that deep, full flavour. It’s everything I look for in a proper British cheddar, with a little something extra thanks to the organic milk.
When it’s young, Godminster is creamy and mellow with just a hint of tang. As it matures, it becomes a bit more crumbly and develops those lovely nutty, buttery notes. There’s a real balance between the dairy sweetness and a gentle tang.
It’s not the strongest cheddar you’ll find, but Godminster has a lovely, lingering tang that stays with you. The toasty, nutty flavours deepen as it ages, making every bite that little bit more interesting.
Because it’s organic, you really get that clean, pure flavour; the milk really shines through. The cows’ grass-fed diet adds a hint of floral and herby notes, and the texture stays creamy and just a little crumbly as it matures.
