Lincolnshire Poacher is a fruity, nutty cheese similar in style to a cheddar with alpine influences. One of a kind and a definite hit in the cheese counter!
Our Lincolnshire Poacher is matured for 14-16 months giving it a compact texture whilst retaining a wonderful creaminess. The taste is undeniably of tropical fruits with a hint of nuttiness and a savoury finish.
Lincolnshire Poacher is made by 2 brothers, Simon & Tim Jones. The cheese is made exclusively on their family farm. The Jones’ have been farming in Lincolnshire for four generations and their cheeses reflect the care and quality that they put into their farming practices.
The Holstein Friesian cows on the farm are fed predominantly on crops that grown on the farm. Where this isn’t possible, extra feed is sourced from within the local area. The farm itself is run as environmentally friendly as possible with solar panels, a wind turbine and a ground source heat pump. These all contribute to the fact that they produce more electricity than they use. Very few chemicals are used on the farm, instead the ready supply of manure is used to replace the nutrients needed in the soil. Alongside this, clover has been grown in the paddocks to fix the nitrogen into the soil. Add all this to a land management system designed to promote the natural wildlife in the area, the brothers are the embodiment of what British farming is all about.
Traditionally you might pair Lincolnshire Poacher with a bitter ale but for a real taste of perfection try it with a glass of Sauternes.
