Bidlea Blue has the yoghurty freshness of a Cheshire combined with a boozy, fruitiness imparted from the cider-washed leaves, which gets spicier as it ages.
Bidlea Blue is a hard blue cheese that is wrapped in edible vine leaves. These have been soaked in Gwatkins cider. The younger cheese has a slightly more crumbly texture, with more a fresh yogurty flavour. The cheese develops some mushroom more earthy notes closer to the rind which is softer and slightly fudgy in texture. The blue is balanced with some fruit and herbal notes.
Bidlea Blue came about after Claire Burt won the blue category in the Academy of Cheese’s Affineur of the Year competition 2024. For the competition Claire wrapped a Blue Stilton PDO in vine leaves that had been soaked in a local cider. It was a complete hit with the judges and so Claire set about making her own version.
