Ribblesdale Blue Goat

Ribblesdale Blue Goat is a wonderful hard, blue goats’ cheese produced for Ribblesdale Cheese who are based deep in the Yorkshire Dales. Blue goats’ cheeses are few and far between, and hard ones are even rarer. This cheese is a firm favourite with many of our customers who love its tangy creaminess.

Ribblesdale Blue has ribbons of blue veining throughout it. This is in sharp contrast to the white paste found under its rind. The cheese itself comes encased in a blue wax which is designed to help keep the cheese moist as it matures.

In order to avoid any cross contamination from the blue mould spores, Iona of Ribblesdale Cheese outsources production to a dairy in the Netherlands who have been making the cheese for them for many years. However the cheese returns to Yorkshire to have its blue wax applied so it is a perfect example of European co-operation!

For us this cheese is the perfect way to round off a meal. Crack open a bottle of sweet dessert wine, slice up a crisp fresh pear and enjoy!
