Devon Smoake is a cheddar style cheese that has been gently smoked for 3 hours over oak chippings. This retains the excellent creamy texture whilst giving the cheese a strong smoky flavour. Rachel Stephens, the cheesemaker, makes a clothbound cheese called Devon Oke which is matured for six months giving it a rich, buttery taste. She then quarters the cheese before smoking it in order to make sure that the smoke can fully penetrate into the paste.
This lovely smoked cheese is made by Rachel on her farm at Jacobstowe, on the outskirts of Okehampton. Rachel has been making cheese here for over 25 years and only uses milk from local dairy farms. Rachel washes the curd of her cheeses which lowers the acidity, giving the cheese a real sweetness.
The smokiness of this cheese pairs really well with a good old-fashioned pint of bitter!
